Hello,   My name is Joe Holloway.

Almost as long as I can remember I have loved being in the kitchen.  
(Well at least for the cooking part of it anyway. )  Some of my greatest
memories as a kid was helping my Grandma make home made
apple pies.  

I began cooking when I was still fairly young.  By the age of 13, I took
over cooking dinner for my family from 3 to 5 nights per week.  I
learned to make home made soups, pot roasts, fried chicken,
biscuits and gravy as well as many other classic American foods.

My wife is also creative in the kitchen.  She cooks traditional Mexican
food that is incredible.   Check out the tamale with green chilies and
cheese, they are awesome.  Posole, chilies rellenos, tacos, and
tostadas are favorites of our family.  

My favorites are slow smoked brisket, or pulled pork served with
home made BBQ sauce.  I also love marinated and grilled veggies.  
I also make my own dry and wet rubs that are great on chicken, fish,
beef, lamb or pork.  

I completed my certificate in culinary arts at the
San Diego Culinary
institute located in La Mesa.  We had a great class, and I feel that
working with talented students and teachers has greatly refined my
cooking skills.  I have also completed ServSafe Certification from the
National Restaurant Association Education Foundation
